Ok, so here is smth I freaking love, it's my favorite type of desert and also very easy to make and very very very good
Romanian pancakes!!! :D * 1 1/4 cups all-purpose flour * 2 eggs * 1 pinch salt * 2 tablespoons superfine granulated sugar * 1 1/2 cups milk * 2 tablespoons butter, melted, for batter * 1 tablespoon butter, melted, for cooking * 6 ounces strawberry or wild cherry preserves (from this, you make like 8-10 pancakes...) Sift the flour into a large bowl. Make a well in the center. Break the eggs into the well. Add a pinch of salt and the sugar. Beat egg mixture well with a fork. Add the milk and continue to beat, slowly adding the flour, until the batter is smooth. Add the melted butter while continuing to beat the mixture with the fork. The batter should be the consistency of a light cream. Let batter stand for 30 minutes. Butter a medium skillet with a brush. Heat over medium-high heat. Test butter temperature by splashing a few drops of water into the butter. Bubbles will sizzle and then evaporate in a few seconds when temperature is correct. Ladle about 3 tablespoons of batter at a time into the center of the skillet and immediately tilt the skillet in a slow, circular motion so the batter spreads to cover the entire bottom of the skillet. As soon as one side starts to brown, flip over the pancake, either with a spatula or with a quick jerk of the skillet. Brown the other side, and then place pancake on a warm dish in the oven at low temperature. It should take about 30 seconds a side to make each pancake. Butter the skillet each time before adding the batter. Place a warmed pancake one at a time on a plate. Place preserves or jam as desired in the center. Enclose filling the way you would a burrito or an egg roll (or simply roll pancake over the preserves). P.S.: Romanian pancakes are similar to French crepes, but they are more like a light, thin pancake. <<< this in case we have some French ppl around :P And here are some pictures of how they should look like...posted these, in case you guys wanna try it, at least know if you succeeded or not haha http://img259.imageshack.us/img259/6...1223189245.jpg http://img19.imageshack.us/img19/9080/clatiteq.jpg Damn, shouldn't have posted the pics, now I am in the mood for some pancakes :D |
